This research aims at analyzing the current execution of nutrition education among Taiwan community colleges;establishing the necessities for the nutrition education, and also the topics, priority of each items; providing suggestion for education courses by comparing the gap between current situation and demands; offering our research as reference for community colleges’ nutrition education courses.
Our research adopts expert interviews and modified Delphi technique and selects specific interviewees.For using the expert interview, we select 7 professional and business experts. For using the latter path, we use 3 modified Delphi technique to inquire 15 academic and profession business experts for their opinions toward the topics and contents of community colleges’ nutrition education. The conclusion of our research is as follows:
1.There have established 71 community colleges in Taiwan, among which only 13 community colleges have offered academic nutrition education courses.There leaves a huge potential for the development of community colleges’ nutrition education.
2.Among the necessity for appraising research result of Taiwan community colleges’nutrition education courses, there are 12 absolutely necessary topics, and 2 necessary topics.There are 73 absolutely necessary topics, and 37 necessary topics.
3.Among the comparisons between the current execution of community colleges’nutrition education and our research result, we find there are 9 items meeting the requirements while there are 5 topics missing which are “understanding organic food”, “the introduction of sources of nutrition information”, “tradition Chinese medicine’s nutrition philosophy”, “understanding the genetically-modified food”, and “ the application and practice”.
Some suggestions incurring from this research are submitted for nutrition education providers, community university course designers and subsequent researchers.
